Spanish Brown Rice

This easy Spanish-style brown rice uses salsa, tomatoes, and garlic for a flavorful twist on a classic side dish. Serve it with tacos or as a filling for burritos.

Ingredients

  • 1 cup brown rice
  • 1 teaspoon minced garlic
  • 2 cups water
  • 1 cup salsa
  • 1 cup diced tomatoes

Steps

  1. Combine rice and garlic in a saucepan. Stir in water, salsa, and diced tomatoes. Bring to a boil.
  2. Stir rice mixture and reduce heat to low. Simmer, covered, for 50 minutes. Turn off heat and allow rice to sit, covered, for an additional 5 to 10 minutes. Stir rice before serving.
