Apple Cake with Cream Cheese Frosting

This apple cake is bursting with pieces of tender and sweet apple and chopped walnuts. Everyone loves it topped with my cream cheese frosting.

Ingredients

  • 2 large eggs
  • 1 cup vegetable oil
  • 2 cups white sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 cups apples – peeled, cored and diced
  • ½ cup chopped walnuts
  • 2 (3 ounce) packages cream cheese
  • 3 tablespoons butter, softened
  • 1 ½ cups confectioners’ sugar
  • 1 teaspoon vanilla extract

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9×13-inch pan. Mix flour, baking soda, cinnamon, and salt together in a medium bowl; set aside.
  2. Combine eggs, oil, and sugar in a large bowl; beat with an electric mixer until lighter in color. Add flour mixture and beat well. Add vanilla and stir in chopped apples and walnuts. Pour cake batter into prepared pan.
  3. Bake in the preheated oven until a toothpick inserted into the cake comes out clean, about 45 to 50 minutes. Allow cake to cool.
  4. To make the frosting: Combine cream cheese, softened butter, confectioners sugar, and 1 teaspoon vanilla in a medium bowl; beat until smooth. Spread on cooled cake.
