Basic Congee

This basic congee is fragrant ginger rice, long-simmered, halfway between soup and porridge. Garnish it with crunchy, spicy, things, like chopped peanuts, chili crisp, green onions, or anything you like.

Ingredients

  • 7 cups stock
  • 1 cup rice
  • 1/4 teaspoon salt, or to taste
  • 3 tablespoons thinly sliced fresh ginger

Steps

  1. Add stock, rice, salt, and ginger to a large saucepan, and bring to a boil over medium heat, stirring occasionally, making sure rice does not stick to the bottom. Reduce the heat to low; simmer for 1 hour.
