This grinder bean salad is sort of a deconstructed version of an Italian grinder, minus the roll. It combines all the classic flavors of a grinder, and holds up well in the fridge.

Ingredients
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons freshly squeezed lemon juice
- 1 1/2 teaspoons dried Italian seasoning
- 1 large garlic clove, minced
- salt and freshly ground black pepper to taste
Steps
- Whisk together olive oil, red wine vinegar, lemon juice, Italian seasoning, garlic, salt, and pepper in a small bowl; set dressing aside.
- Combine cannellini beans, garbanzos, mozzarella pearls, red bell pepper, red onion, pepperoncini, salami, capicola, and basil in a large bowl. Pour dressing over salad, toss until well combined. Flavor improves with refrigeration.
